OK I admit it.. in all our past trips we have never really 'done' the Disney dining thing... lots of counter service & the occasional 50's Prime Time... with a family of four (two of which eat me out of house & home) sit-down dining was too cost prohibitive...

We are renting a villa offsite this time around & plan to do most of our eating there...since we will be saving so much on food this time I was hoping to do at least two nice meals, at least one at Epcot...

What would you recommend? Where should I start?!

Well, start with deciding what kind of meal you would like - character or no characters, exotic or meat and potatoes, atmosphere or food quality more important.

For Epcot I would recommend:
Le Cellier for good hearty food, steak
Marakesh for a little exotic food and entertaining atmosphere
Garden Grill to see Mickey
Biergarten for a hearty buffet with lots of choices and entertainment

For Resort dining:
'Ohana for lots of food and entertainment for the kids (you don't state how old they are, but I am assuming pre-teen?)
Chef Mickey's for characters
Concourse Steakhouse for steak
Beaches and Cream for casual burgers and icecream

MK:
LTT for characters
Plaza for good food at a decent price

Hope that helps!
*PS - my dd loves your dog!
