Special experience suggestions needed! Please!

Looking for suggestions of something "new to us" to do. We are a group of 4 (Dad, Mom, DS 7 and DS 3) who go to WDW once a year and have for the past 8 or 9 years. We like to add something new to each trip as a little special experience. These experiences have ranged from one year we did the Christmas party, one year we took a carriage ride and another we resort hopped to a new resort we hadn't been to. We will be there the first week of October and have talked about the Halloween party but are worried about crowds (the Christmas party was fun but so crowded). We'd like suggestions on what kind of special things you do to make rash trip unique/special or could suggest for us (please remember we have a 3 year old). Thanks for any suggestions!!
 
Fireworks cruises are nice or you can go over to Fort Wilderness to see the horses at the stable, and do Hoop-de-Do-Revue
 
Not sure what price point you are looking at; but this year we intent to try out the Pirate and Pals Fireworks Voyage and possibly the Amphicars at Disney Springs. I just found out about the Amphicars and I think they sound so neat!

We also try to add one thing each year. This year we are adding the pirates and pals fireworks cruise. If your boys enjoy pirates, you could do the pirate league in the afternoon and take the cruise at night. Apparently captain hook, smee and peter pan all make appearances at some point, along with snacks (ice cream bars, cotton candy, popcorn...).
 

If you haven't been to a place before or in a long while, something like Universal or Sea World- Discovery Cove or a waterpark might fit the bill. Maybe even a Disney quest or a dinner show or show you haven't done before.
I don;t know what you have done before but there's lots of things in the area that might be new for you.

Do the halloween party at least once.. Trick or treating in the magic kingdom is something that your kids will remember for a long long time and do it with their kids one day...

Oh, they will only hold 3 guests at a time. Darn! We'd have to split up and I'm not we'd want to do that. Maybe when they're a little older.

We also golf and minigolf, have done the parties, did an Illuminations cruise, rent Sea Raycers HDD, SOA, carriage ride, rent a cart and spend the day at FW. This year they are taking surf lessons at Typhoon Lagoon and archery lessons at FW.

Go over to Ft Wilderness to eat at Trails End and rent a golf cart to tour the camp ground and check out all the Halloween decor.
 
Definitely try the Halloween Party at least once. You're going in October-so it's a great opportunity. A lot of those other experiences can be done in a different month, the Halloween Party is a fall-only thing.
 
Pirates and Pals Cruise is by far and away the best extra we have done at WDW. Worth every penny and would do it again in a heartbeat.
 
Hoop dee doo or Universal - the marvel area seems like something a boy would like :) plus the Harry Potter areas are fun for kids and adults
