I feel silly asking this, but help a (sorta??) flying novice out.

We plan to book our tickets separately so we won't have to put them on a credit card. Booking tickets TO Orlando, then booking tickets back to Dayton (Or columbus OH) at a later date.

Last time we flew I was able to rebook our fares for a lower rate when a sale came out. We received a credit, but were not able to use it.

If we book separately, and a sale comes out, I can use the credit from our outgoing flights to go towards our return flights, right?

We have flexible dates to try to catch free dining. Currently we are book with disney for December 2-7th. We will probably change that, possibly to the 3rd-10th.
