Is there a set date that southwest and jetblue release flights? Im wondering when to pay attention in order to book for May 2017.

SWA: On November 1, 2016 we will open our schedule for sale through June 2, 2017. This date is subject to change. Please check back frequently. Currently we are accepting air reservations through April 24, 2017.

JetBlue: Based on last years release; October 4, 2015 for flights on sale through June 15, 2016, I would assume or keep an eye out for the first week of October, 2016 for their schedule to be extended to sometime in June 2017.

Just a word of caution... don't under-estimate the importance of their warning, "This date is subject to change. Please check back frequently." I've been personally burned by SWA pulling in that date after I made note of the original date and not catching the revised date 'til after it passed.

Their current prediction is for 2 1/2 months away... that's a lot of time for them to change their minds. I've got outbound tickets for April (the window that just opened up) but the return date isn't yet available, and it's school vacation week up here, so I've got the "flight schedules" page bookmarked so I don't miss the cheap seats the minute they go on sale.
