If I am using the southwest shopping portal to book a hotel room and a flight, how can I book the room for only a portion of the trip? And how can I do room nights but only a one way return ticket? Do I just have to call or am I missing it on the website?

You need to book your hotel and flights separately if you don't want the hotel for the entire length of your trip.

I don't see a way to do that through their shopping portal since all of their travel merchants sell packages. You would need to book one of their partner hotels under their travel partners tab instead of going through their shopping portal. Then you would just book your one-way ticket on southwest.com.
