Something different in Disney

Occasionally I see that people have done something different at Disney that I never can find advertised.

One I saw today was Keys to the Kingdom or Backstage Safari, I have no idea what they are, how much and what they involve.

My question to everyone is how do you find out about these, they never seem to be advertised anywhere, and what else am I missing out on that we can do when over there.
