Hi Homies :wave2:
Been MIA- had been busy this week.
Both DH and Matthew are at a boy scout winter camping thing this weekend. Had alot of packing to do.
It's 3hrs away from our place. DH called late last night and they got there ok
They will be snow tubing. Some boys signed up for skiing. I just pray no one gets really hurt, breaks any arms or legs, etc. Sounds like they will have fun, tho Matthew is not a winter outdoors kind of boy- maybe he will be after this weekend. Staying in a heated cabin but with no running water in the cabins.

Chrissy is enjoying the 1 on 1 attention from me, at least until the boys get home :laughing: THen she will be cranky as usual b/c Matthew will want to take over the tv :rolleyes: Chrissy is enjoying the tv to herself :happytv:

Chrissy and I are supposed to meet up with my cousin for lunch today, but not sure b/c it is snowing and it is blowing pretty bad. Might have to cancel.


Oh, need to share this. Really cute from Matthew- small mommy brag :goodvibes Last Sat. I couldn't get reservations to this rest. I really wanted to go to for Valentine's day. Anyways, the kids could tell I was a little upset, so Matthew writes up this Valentine's card for me. This is what he wrote," Dear Mom, Thank you for being part of my family. You are both a good nurse and mother. You deserve a good romance moment with your husband. I like you because you care for me. Thank you! Love, Matthew".
Sorry, but I thought this was so adorable :cutie: I guess he should write for Hallmark Cards :)

Okay, it's late and I just got home for the first time since 9am, so I'll make this quick. Stephen did stay home dying today :rolleyes: and insists it didn't help any and he still feels just as bad. Told him go to bed cause he's going to school tomorrow! :rotfl:

Meanwhile, at the conference with the band teacher, we got the full scoop on Eric's injury. Yes, of course we hadn't been given all the details. Guess the band teacher had walked by the group of kids shortly before Eric got hurt and saw them all there. Want to guess what they were doing? :rolleyes1 Yes, you will NEVER guess! They were all sitting on the ground, in the HIGH SCHOOL foyer, playing a rousing game of......Duck, Duck, Goose! :rotfl2:

The teacher said he considered asking them to stop, but since he knew all the kids involved (and they were all good kids), AND it's a game that kids generally can play safely by the time they're in kindergarten ;) he decided not to bother them. Yes, only my kid can end up with 5 stitches playing duck, duck, goose! :sad2:

Everyone have a great Friday! I'm going to spend the day packing for our camping (yes, you read that right!) trip this weekend. Going up to the cabin on Lake Michigan with no electricity and no bathroom. Oh, and bringing both girlfriends along. Should be a fun weekend! :scared1:

Just wanted to drop in and say hi and let you all know that I did not drop off the face of the earth. I started back to school in Jan. and jumped in with both feet well on my way to an RN degree. I am taking 17 hrs this semester and it has been a tough adjustment.

On top of that my dad booked us on a cruise. Now he couldn't book it for spring break, he booked it for March 1 - 8th. We will be leaving next saturday to drive to Galveston. So of course I have been trying like crazy to get ahead. I think I will be sleeping through the cruise! :headache:

Anyway I hope you are all doing well. Miss ya!

Congrats on going back to school! What yr are you in for the RN schooling? In the beginning? You can ask me some RN school questions if you want, tho I graduated in 1990. I remembered it was hell going thru nursing school. I did get my basic courses out of the way first(anatomy and physiology,biology, chemistry,etc) before I started with the RN clinicals and lectures. The nursing instructors were like army drill sargeants(at least the ones I had :eek: ). It was all so very interesting :rolleyes: I'm sure your instructors are not quite as crazy as the ones I had.

Okay, it is nearly afternoon, but I've been busy. Apparently spring is on the horizon, since my dog has started leaving enough hair on the carpet to build another small dog. :rolleyes: I am on a mission to rid my house of the hair before we are all covered in it.

Joshua had another breakthru seizure on Thursday night. Spent the night in the ER and all that. We've got another round of tests coming up next month to see what is going on. This is his second seizure in just over a month, so we need to know why the meds aren't controlling them well.

I scanned the posts quickly, but did I see somebody was looking for a good flourless chocolate cake recipe? My MIL has Celiacs, so I've been cooking gluten free for years. I've got tons of recipes. The best chocolate cake I've made by far is this one:

Flourless Chocolate Cake

1/2 cup water
1/4 teaspoon salt
3/4 cup white sugar
18 (1 ounce) squares bittersweet chocolate
1 cup unsalted butter
6 eggs

DIRECTIONS

Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.
In a small saucepan over medium heat combine the water, salt and sugar. Stir until completely dissolved and set aside.
Either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate. Pour the chocolate into the bowl of an electric mixer.
Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. Beat in the hot sugar-water. Slowly beat in the eggs, one at a time.
Pour the batter into the prepared pan. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes. The center will still look wet. Chill cake overnight in the pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.

If you want to really set your taste buds dancing, add this caramel sauce to the plate:

1 1/2 cups white sugar
1/4 cup water
1 1/2 teaspoons fresh lemon juice
1 cup heavy cream
2 tablespoons unsalted butter

In a heavy saucepan, stir together 1 1/2 cups of sugar, water, and lemon juice. Bring to a boil over medium heat, and cook without stirring until the syrup is a deep amber color. For an accurate color check, dip a metal spoon into the syrup and lift it out of the pan to check the color. Once the syrup is amber, remove from the heat. Gradually stir in the cream. The mixture will bubble vigorously. If lumps form, stir gently over low heat to dissolve them. Stir in 2 tablespoons of butter.

Have you tried a Popcorn Cake? Simple and super nummy. :goodvibes

This should probably be close to Mytho's. I just need to figure out the banana part--I think it was just a fried banana peel with cinnamon and sugar. Does anybody know out there?

Roseprincess, I live about 5 minutes away from Home Run Inn. I much prefer Uncle Pete's pizza, though. It is only about another mile east of HRI. If you get a chance, you should try it. Pete Sinagra, the owner, is a buddy of Emeril's. He had Uncle Pete on his show when Emeril was talking about the best Chicago style pizza. It is only a carry-out, but it is so worth it.

Macraven, you probably are only about an hour and a half from me. Bring on the Vanilla ice cream.

Andy, if you couldn't swallow the tequila, then you haven't had real tequila. I'm not talkin Cuervo here. Cabo Wabo, the brand produced by Sammy Hagar, is my favorite. It has lime built right in. You don't need no stinkin salt. It goes down as smooth as brandy. Very Sweet. No Burn. Also good are Patron and Corzo. Don't write it off until you have tried the good stuff. Good luck on your audition.

Took clients out for dinner last night. Had a great time. It is always nice when the people you work for are alot of fun to boot.

Today I'm gonna try to work on completing the trim on my wood floor DH and I put in. DH doesn't want to do it, so it looks like I might be on my own. I keep telling DH that he is so lucky he married me. I cook, bake, have a good career and I am quite the handy-woman. I also turned him on to coasters, WDW and US. For all of that, he forgives my poor housekeeping skills.

Hey youse....

Got some wonderful news yesterday.....kinda long so bear with me.

Ahem....

When i started at Gap I worked with this lass.

He was very beautiful and had been a model in her teens/early 20s.

She had a wee girl only months younger than the boy and DH was sooooo handsome..:lovestruc

She was kinda flaky but good fun if you took her stories with a pinch of salt.

Anyways, I met her one day about 18 months ago and she told me she was leaving next day to go live in Australia.

WOW and cool i thought.

Now fast forward 12 months,I walk into my first day at IKEA to find said lass's DH is my boss.

Im confused ,because he is supposed to be in oz !!

NO.

Unknown to me they had split up and she had ran off to oz with his wee girl.

He had gotten a phone call one monday morning to say she had not turned up at school and some of the kids in her class were saying she had gone away to live !! :eek:

It turns out the wee one lived with my boss most of the time and he was an amazing dad.Basically the main parent.

As youse can imagine he has been heart broken.


So now the good news.

He is leaving for oz in 8 weeks.

Ikea have " created " a job for him and have gotten him a place to live just 5 mins from his wee lass.

I can't express just how happy he is.

As i said he is soooo handsome and a really nice guy but his life is empty without his wee girl.

Its been so hard to watch.

He told me yesterday he didnt know how he survived because when he opened his eyes every morning his heart broke all over again.

When he told me that i was in floods of tears.

I could not imagine being away from the boy and i really dont know how he coped.



Im so happy for him.
