circelli....if i miss you...have a wonderful trip :goodvibes You do know you are obligated to take many pictures and report back, right ;) ...and, don't forget to have someone take your picture too :thumbsup2

I could use the warmth of Mexico about now...so chilly and windy here today, trash cans are everywhere out there :sad2:

off to make chili for DH's dinner tonite..... Happy Friday all :wave2:

Hey! Great minds think alike.....Jim and little Bud are making chili this weekend too. :cloud9: Last night he made this mac and cheese - it has like 4 different cheeses in it :yay: And whipped up a teryaki chicken dish. I love my hubby:love: I love it even more that he loves to cook ;)

Happy Friday everyone ...

circelli -enjoy your trip and yes please take lots of pics ...

Niki - that souffle looks wonderful but I think I'd make a mess out of it if I tried to make it

By the way - got this in my email this morning ... check it out www.hollywoodrockit.com

Donald - that guy's attitude is totally unacceptable. I hope you don't have any fall-out at work over this jerk.

Had a busy day today. Needed to relax so I baked (just something I do when I'm stressed.) I finally downloaded the recipe for Chocolate Grand Marnier Souflee from Emeril's Restaurant at Universal. Came out really well. None of them fell. The sauce is outstanding. I now have a little piece of US resort that I can break out after a bad day. Not only does it taste good, but it has good memories attached to it.

I would post the recipe, but I would feel guilty after seeing that healthy soup recipe from Rapstar.

Hey You wouldn't happen to have the recipe for the Flourless Chocolate Cake from Mythos would you.

I've searched the internet and can't find it.
If you contact the restaurant will they give you the recipe?

And your recipe looks divine. Maybe make it next week. Still have brownines and cookies that I just made.

I have to bake EVERYTHING now because our family needs to be gluten free.I have a great flour that can be substituted cup for cup for regular flour. But because I bake what I used to buy in packages, I'm saving money in this wonderful economy of ours.:goodvibes

Haha...last nite DH didn't come home from work...went to Pat's for dinner on their way to Flyers game...didn't get home till 11:30pm...out the door at 6am for work :sad2: I had left-over potpie for dinner and Bubba had a cheesedog. He very well may get that again tonight, because I don't think he's fond of DH's chili...or, he'll get a grilled cheese sandwich.

youse think Im kiddin !!

We went swimming with Dolphins in Mexico in 2000.

They swam round and round me the whole time and would not interact with any one else.

It was as if they were protecting me.

When we got out the trainer asked if i was ill or pregnant to which I answered " Hell no !! " on both counts.

I found out I was indeed pregnant with the boy two weeks after returning home........weird but true.

P.S I feel i must explain my reaction to the pregnancy question.

No ,The boy was no planned but i can quite safely say he was and still is the best ever " wee miss calculation " DH and i have ever made......

have 2...corona washed down with a shot of tequila sounds good about now
scotlass - sweet story:) ; im more of a manatee kinds of gal:goodvibes . Did you know dolphins can become agressive when females r 'hormonal'. When they get rough with males, its thought to be just wanting more interaction - don't want the play time to stop. Def more stories wherein dolphins sense a swimmer is in distress & known to actually grab them & tow to shore, some even pushing peeps with their snouts:thumbsup2 .

barb - max has found his spot on the bay window ledge...reminds me of a cat sunning himself:goodvibes

back to tax prep, no woo hoo:rolleyes1

Morning!

Okay, it is nearly afternoon, but I've been busy. Apparently spring is on the horizon, since my dog has started leaving enough hair on the carpet to build another small dog. I am on a mission to rid my house of the hair before we are all covered in it.

Joshua had another breakthru seizure on Thursday night. Spent the night in the ER and all that. We've got another round of tests coming up next month to see what is going on. This is his second seizure in just over a month, so we need to know why the meds aren't controlling them well.

I scanned the posts quickly, but did I see somebody was looking for a good flourless chocolate cake recipe? My MIL has Celiacs, so I've been cooking gluten free for years. I've got tons of recipes. The best chocolate cake I've made by far is this one:

Flourless Chocolate Cake

1/2 cup water
1/4 teaspoon salt
3/4 cup white sugar
18 (1 ounce) squares bittersweet chocolate
1 cup unsalted butter
6 eggs

DIRECTIONS

Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.
In a small saucepan over medium heat combine the water, salt and sugar. Stir until completely dissolved and set aside.
Either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate. Pour the chocolate into the bowl of an electric mixer.
Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. Beat in the hot sugar-water. Slowly beat in the eggs, one at a time.
Pour the batter into the prepared pan. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes. The center will still look wet. Chill cake overnight in the pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.

If you want to really set your taste buds dancing, add this caramel sauce to the plate:

1 1/2 cups white sugar
1/4 cup water
1 1/2 teaspoons fresh lemon juice
1 cup heavy cream
2 tablespoons unsalted butter

In a heavy saucepan, stir together 1 1/2 cups of sugar, water, and lemon juice. Bring to a boil over medium heat, and cook without stirring until the syrup is a deep amber color. For an accurate color check, dip a metal spoon into the syrup and lift it out of the pan to check the color. Once the syrup is amber, remove from the heat. Gradually stir in the cream. The mixture will bubble vigorously. If lumps form, stir gently over low heat to dissolve them. Stir in 2 tablespoons of butter.

Have you tried a Popcorn Cake? Simple and super nummy. :goodvibes
