In general, each plan offers a certain number of various types of entitlements per person, per night of your stay. You must book the same plan for all members of the party, and it must be for the entire reservation length. All entitlements are granted as a lump sum to the party (accessible from any key card) at check-in, and are valid for use until midnight of the day you check out. They may be used at any time, in any order, for any member of the party. No entitlement may be used for anyone outside your party.
Entitlements consist of:
Snacks - Typically any single-serving, non-entree item valued at less than $4 (some exceptions exist). For example, corn dog nuggets (an entree item) at Casey's are not a snack, but a side of chili would be. Most cart-type items (popcorn [box], ice cream, drinks, chips, etc.) qualify, and many items from bakeries, candy stores, and counter service restaurants may also qualify.
Counter Service (CS) - As the name indicates, you go up to a counter, order, pay, and take your food with you. (Think McDonald's, only hopefully with better food.) You may get an entree or combo, a drink, and a dessert. (At breakfast, you get juice instead of dessert).
Table Service (TS) - Any "waitered" meal, including buffets and "all you can eat" meals. This includes an entree, beverage, and dessert. Tips are not included, except when noted.
Meal Credit - On deluxe, premium, and platinum plans, you receive "meal credits" instead of counter service and/or table service credits. They may be used for counter service or table service meals. When used for table service, an appetizer is also included.
The various plan packages are:
Quick Service Dining Plan (QSDP) - You receive 2 CS and 2 snack entitlements per person per night of your stay.
[Basic/Regular] Disney Dining Plan (DDP) - You receive 1 CS, 1 TS, and 1 snack entitlement per person per night of your stay.
Deluxe Dining Plan (DxDP) - You receive 3 meal credit and 2 snack entitlements per person per night of your stay.
Premium and Platinum Dining Plans: As DxDP, with additional resort amenities included, such as golf, tennis, boating, fishing, etc.
All packages except the basic DDP include one resort refillable mug per member of the party.
Note that under basic DDP and DxDP, certain restaurants and dinner shows require 2 TS/meal credits per person.
