Someone just told me that the parks during the winter months close at 7pm?

Not really. DHS typically closes at 7, but I don't think it's just a winter thing. I think AK is generally only open later than 5 in the summer and peak crowd times (Easter and Christmas). Epcot never closes earlier than 9 and I think the only time you're going to see MK close earlier than 9 is in the fall on days when the MNSSHP or MVMCP take place, when it closes at 7 to guests who don't have tickets for the parties.
 

Someone correct me if I'm wrong, but I remember in the "old days" that sometimes MK closed as early as 6pm on weekdays in certain cooler weeks.

This month (January) Animal Kingdom closes at 5pm. (Around dusk.)
Hollywood Studios closes between 7 and 9pm depending on the day.
EPCOT is always open until 9pm.
Magic Kingdom is open until 8pm to 1am depending on if it's a weekend or holiday night.

Maybe in the 80s. But on a band trip in late February about 9 years ago it closed at 8 maybe 7.

I was in AK 2 weeks ago and they closed at 8.
 
On my first trip in mid October 1994, MK closed every night at 7:00pm. No fireworks or Spectromagic the whole week. No Halloween Parties back then, at least not during our trip. There was of course, Illuminations and there was Fantasy in the Sky at MGM on Saturday night. AK did not exist.
 
Thank you for all your replies, I was wondering the hours because first year not staying club and thinking with the parks closing early that maybe we should reconsider that decision.. I will look at the link with the park hours for the first weeks in December,..."also".. are all the Christmas parties and Osborne lights and other Holiday events going on the first week of December? First time going in the winter months...

Christmas parties start in November, the Christmas parade and holiday wishes will only be shown at the Christmas parties until a couple of days before Christmas when they will be shown every day, Osborne lights would be up then; however there are rumors that they may not be back this year- construction at dhs and/or sponsorship issues.

The Osborne lights not being lit next year is rather disappointing, never got the chance to see them :sad:... I just wanted the family to see disney at Christmas with all the decorations and shows. We usually go in August but the heat each year seems to get more and more unbearable and less enjoyable. thinking we would rather deal with coats than heat exhaustion.. Thank you :)

Well, it's only a rumor for now. And it's a rumor that starts every single year. I wouldn't count them out just yet.

The last 2 years (now 3) I heard they are not coming back. Great Disney advertising I think! Get people to come see it one last time. Though I am not sure how many people planned a trip to see the hat before it came down.

The day after Thanksgiving starts the Candlelight Processional and I can just about guarantee you that Epcot will show Illuminations at 9:30 starting that day and continue on until the last Candlelight Processional is over. So, Epcot will be open until 9:30 every night during your trip.
