since I don't have anything to report on the scrapping front I thought I'd share some recipes we've been enjoying.
Garlic and Parsley Potatoes
1-1 1/2 lbs. small new red potatoes, scrubbed
1/4 c. water
1/4 c. butter or margarine
2 garlic cloves, minced
1 tablespoon finely chopped parsley
In 1 1/2 Qt microwave safe casserole, combine potatoes and 1/4c. water. Cover tightly. Microwave on high for 7-10 minutes or until fork tender, stirring once halfway through cooking. Let stand 3 minutes. Drain. Place butter and garlic in 1 cup microwave safe measuring cup and heat on high for 1- 1 1/2 minutes or until butter is melted and garlic is softened. Stir in parlsey. Pour over potatoes and toss gently to coat.
Buffalo Potato Wedges
1/3 c. margarine or butter, melted
1 tsp. white vinegar
3 or 4 tsp. tabasco (or less)
1/2 tsp. salt
4 unpeeled medium potatoes, cut in thin wedges
1 cup bleu cheese dressing or Ranch dressing for dipping
Heat coals or gas grill. Mix margarine, vinegar, tabasco, and salt in shallow dish. Dip potato wedges into margarine mixture, reserving remaining mixture.
cover and grill potatoes 4-6 inches from medium heat 25-35 minutes, brushing occasionally with margarine mixture and turning once or twice, until tender. Serve with dressing.
