Does anyone have any white wine chicken recipes they'd like to share??

Also, I needed bourbon for a recipe and my MIL mistakenly bought brandy instead. What kinds of things can I do with it? I don't drink so I am looking for some recipes

I use quite a bit of wine, etc in cooking. White wine can be used to make sauces for just about any chicken dish but it really yummy when used in stove top cooking.

For instance, chicken marsala generally dredges the boneless chicken breast in unseasoned flower and then browns (braises) it in a skillet with a mixture of butter & olive oil. Once the chicken is browned it is removed and shallots and garlic are sauteed in the remaining oil. You end up with bits stuck to the bottom of the pan. Add a cup or so of white wine to deglaze the bottom of the pan. The yummy bits stuck to the bottom come loose, mix with the wine, shallots & garlic. Let it cook down a bit and then add the chicken back to finish cooking. Some people add heavy cream but I don't so mine probably can't really be called chicken marsala! Traditionally this dish is served on a bed of cooked spinach but I generally use fettucine noodles seasoned with an Italian seasoning blend as my kids aren't real thrilled with eating spinach!

For the heck of it, I did a search for chicken & white wine -and- chicken & brandy - they have several recipes listed for both.
