I've been cooking for years so it's probably surprising that I've never come across soft breadcrumbs in a recipe. So, how do you make them? Just tear up slices of bread?

Pretty much! I've got one of those Tupperware things you're supposed to use instead of a food processor. I use it for two things - houmous and breadcrumbs:lmao: Take the crusts off, tear it into rough lumps and put it in the hopper with the two-blade thing and turn the handle. If you haven't got one of those the old-fashioned way was to grate them with your fingers (literally in my case:headache: ) on a box grater. Stick blenders don't do the job (but they do make a snowstorm effect:rolleyes1 ) but you can chop in a food processor.

How do you grate soft bread slices with a grater? Or are you talking about a loaf of bread?

its not easy - you need thickish slices (if you have sliced bread fold several together) and stand a box grater on a piece fo baking parchment so you can catch as many stray crumbs as possible. I tried a rotary grater but it just squashed them:headache: You cn also use a half-moon chopper like you would for herbs.

When I need soft breadcrumbs I just take a few slices of bread (I freeze the ends and odd slices until I need them) and then throw them into the food processor and whirr them until they are crumbs. Measure as usual, but don't pack down.

..because if you pack it down you're back where you started:lmao:
