~I just formed my opinion on the basis of familiarity. As a "grown up" -- my first experience on Soarin' was quite different than my first experience on Test Track. That sounds like a reason to choose Soarin'. The OP says that her child is a nervous nelly and thinks of TTA as a roller coaster. She doesn't really sound like she's ready for a fast ride like Test Track.
~The first time I rode Soarin' -- I didn't know what to expect and I was a little terrified once the ride started to ascend. I started to get nervous because I found the seating to be awkward and I didn't feel all that secure.
I was really expecting a big thrill ride!
~The first time I rode Test Track -- no issues. It was huge car that went fast for just a few seconds -- but still slower than the posted 70 MPH speed on most US freeways. And, we were buckled in nicely and I had no concerns of possibly falling.
~It's funny -- because I did not know what to expect on Dinosaur. I was expecting a very mild dinosaur tour and left in total shock afterwards.

~But, every child is different. I'm sure the OP will be able to figure out which ride is best.

~Yes! I totally agree with this. You go faster on the interstate..... I would think Soarin in worse because your dangling high up in the air. TT feels more like a gokart
