So you have an extra $500, what do you do?

Memory maker and a table-service dinner that would normally have been cost-prohibitive
 
I think the spa suggestion is a good one, or possibly a shopping/pub crawl on the monorail for an afternoon? Since this isn't your first trip, I'd suggest finding time to relax (crazy right?). Every trip my wife and I find ourselves planning more and more "off" time into our schedule. If you're flying, what about trying to upgrade to 1st class, or maybe a room or resort upgrade?
 
I'd switch my park hoppers to base tickets and use that plus the $500 to stay an extra night or 2. If I didn't have to change flights and incur fees for that.
Otherwise I'd opt for one of the tours.
 
I am inclined to lean towards doing a couple of smaller tours - maybe even include behind the seeds tour. I thing universal is definitely out because that $500 will only get the tickets (park to park one day is $165 so x 4 yikes!!). Keys to the kingdom for $99 per person doesn't seem like a bad deal for the 5 hour tour and lunch. Not on your list - If you don't have it get the memory maker get it-- the ride photos included are the best.
 

I'm torn between Universal and the Wild Africa Trek. (And now that someone mentioned it, Kennedy Space Center sounds like a great idea too!)

I'm a huge Harry Potter fan, and have been to Universal several times. It is fantastic! But I get what you mean about the park-to-park add-on just to ride the train. We kind of felt a little gouged by that, because we were there for multiple days and otherwise would have just done one park each day. Where you'd only spending one day, though, you'd want the park-to-park anyway, to see both Diagon Alley and Hogsmeade, so I wouldn't feel so bad about it.

But I've also wanted to do Wild Africa Trek since I first read about it! If you're going to be in Florida again soon, I'd add the trek this time and then just go full Universal the next trip. But if you're not going back, do the day at Universal while you have the chance.

Since you already have tickets for all your 7 days, I would stay on property or you will end up missing out on some Disney park time that you likely already have planned.

I like the idea of a tour and I think the AK Wild Trek would be perfect with kids your age, so my vote goes there. If there is any money left, I would put it towards either memory maker or maybe a special dinner - Hoop de Doo Review is always a fun option.
