Punkin, you wouldn't like to share your cucumber sald recipes would you? Love them, but have never made them.
I can't do exact recipes because I eyeball everything, but I will give you the ingredients.
1) small cucumbers very thinly sliced (I like Kirbies, but you can use regular or english)
very thinly sliced onions (I like to use one small onion)
MARINADE:
vinegar
sugar
dill (it must be fresh dill)
salt
pepper
In small bowl, mix vinegar, sugar, dill weed, salt and pepper. Whisk with fork until blended. Pour over onions and cucumbers. Turn with spatula to coat all pieces. Marinate 1 hour or more. It will sit for several days.
2) cucumbers (very thinly sliced)
grated carrot (I used one)
Salad Dressing:
Mayonnaise (I use very little, maybe a tablespoon)
Soy sauce
grated ginger
grated garlic
sugar (just a little)
rice vinegar (you can use regular, but I like rice better in this)
miso paste (I prefer shiro, but anything works)
Mix the salad dressing ingredients well. I usually add a few spoons of water for a thinner consistency as well. Pour over carrots and cucumbers. Turn with spatula to coat all pieces. This can be done in advance or put on at the last minute before serving. It does not need to marinate.
