I'm also a Yankee but there are some parts of my southern roots that I just can't shake off.

I grew up in SC as did all of my moms side of the family and we never had rice for Thanksgiving. In fact, I never knew anyone from SC that ate rice on T-giving day. Interesting family tradition

My mom normally cooks the turkey. She makes giblet gravy. I don't touch the stuff. YUCK. I bring my own jarred gravy. She used to put it in her dressing, but when I wouldn't touch the dressing, she stopped doing that. When I cook a turkey, I throw the giblets away.

We've always cooked them up and eaten them, along with the bird. And I've heard of some folks chopping them up and mixing them in with the dressing - at least the organ meats (it might be hard to do that with the neck). But I was surprised to learn that some people throw them away . . .

So, what do you do?

I use all of them, except the liver, to make a stock for the gravy. I find the flavor of the liver overpowers the other giblet flavors.

I also have never heard of adding eggs to gravy. The giblets get eaten around here but not in the gravy.

We always boil up the giblets with onion, celery, garlic and seasonings to make a broth. The broth gets used in both the gravy and dressing.

The giblets get chopped up real small and added to the gravy. Sometimes the neck is saved for snacking, instead of adding it to the gravy.

Thanks for the reminder. I bring the devilled eggs, so I need to make sure to save a boiled egg for my mom to put in her giblet gravy.

I use them for the broth, eat the liver & toss the rest. (no dog) DH was sooooo grossed out by giblet gravy the 1st year we were married I've never done it again.

When I lived at home we always had giblet gravy - without the egg.

Let me tell you all WHY we DON'T give our dog the giblets......


It happened a couple years ago. DH was happily dicing up the giblets and extra skin for our golden, Boomer. He and the cats had a wonderful feast.

Fast track to Friday morning. I was awakened by DH telling me Boomer was having some...uh...GI disturbances on his last trip outdoors. I got up to the bathroom and when I opened the door, DH was yelling and there was a splatter of brown from the front door, down the hall and into our bedroom. I have never seen such a site. On the walls, everywhere.

We tried to clean up with our little green machine but no go. DH went to Kmart and bought a huge carpet cleaning machine. We worked for about 12 hours on this mess. Poor dog was shaking and had to be cleaned off too.

So, from then on in our house we THROW THE GIBLETS IN THE TRASH.

Not only do I throw them out, I reach in with tongs to get the little paper bag form inside. I won't even touch them.

Why would you be grossed out by someone eating the meat off the neck???? It is dark meat and tastes just like any other dark meat on the turkey. There is not much of it there and you have to pick it off but it is actually good.Don't knock it till ya try it!!!

I have never had rice with my turkey either...potatoes only and NEVER instant!! I have heard of it though. Here is our community it seems to be more by the African American families than any others. (Of course this is not ANY scientific data...just what I am told by my African American co-workers) Once when I asked about it they told me ...and I qoute....."Girl.....thats a black thang"

No flames please....Its just what I was told!!

Actually, it must be an Asian "thang" too. We eat almost anything, you know, and we would never THINK to let good gizzards, livers, hearts, necks, etc. go to waste!


I'll admit, I was amazed that people throw away the giblet packet!! Folks, you don't know what you're missing!!
