There are real reasons to stay at the values & I'm not knocking them. They're just not for me.
I don't travel w/ kids & the values are overrun with them, which is not an atmosphere I solicit. The mods are quieter w/ more room, both in the rooms & on the grounds.
The mod themes are still Disney, but much more elegantly expressed & less frenetic. I LOVE Port Orleans & Port Orleans Riverside & usually take at least one early morning to stroll up & down the river.
I find the mods have better, larger food courts. (To be fair, I HATED the DELUXE Polynesian's food court & found the AKL's inadequate but much better. I think that's a function of resort age rather than resort price. I don't need a sit-down, but it's a nice option if you like it.
I find the mods usually have more busstops, which makes for smaller, quieter crowds. And the resorts are primarily closer to the parks.
It sounds as if you're very happy w/ the value resorts, but I'd go crazy there: it's a matter of preference. As long as we all get what we want & Disney makes gobs of money, everybody wins!
