So much on board credit!!

We had quite a bit of credit as well. Some of the bigger ones were luggage sets for my daughters and a painting. They have some that are hanging but there is also a book that you can look thru. They will ship them to you and that cost is also covered under the credit.
 

We had $7K after rebooking one cruise. To avoid having this converted to onboard credit we booked two more B2B and now down to $2300 onboard credit on the next cruise. Still a lot for a 7 day.

But if your credit expires in September couldn't you use the large remaining FCC to book something before then and after it is applied shift that booking to a later one? Once applied the FCC becomes just a deposit and you can usually move a booking to a later cruise without penalty.

Other possibility - other cruise lines (for sure Royal) let you cancel a cruise booked with an FCC and they just reissue the FCC with a new expiration date.

Unfortunately I don't think either of these options work with DCL. I have done the very thing you've suggested above about booking and then shifting it to a later cruise and was told the September date was still valid. They also do not reissue with a new FCC. For other cruiselines they have a fixed term for FCC so this makes sense i.e. 2 years from when created. For Disney they have a fixed expiry date so this would not work.
 
Ok, this is not a bad problem to have, but what can we spend our on board credit on? We are huge Disney cruise fans and have sailed 16 times but not since February 2020. We have had to rebook or cancel 8 cruises we had scheduled. We had 3 scheduled for 2021 but just canceled our February one because we are hoping, praying the restrictions go away but don’t think they will by then.
When we called to cancel they said we now will have 2,600 dollars that will be applied to our next cruise if we don’t use it before then. Our next cruise is a 3 night Wish in September. The credit expires they said on September 30, 2022. We can’t fit in another cruise with my job and moving so this leaves us with the thousands for on board credit on our 3 night cruise. What can we possibly spend this on? We are spendthrifts and on our previous 16 cruises have probably not spent more than 50 dollars above the tips.
What should splurge on?
