Can your DH eat soy or vegan cheese? We use vegan cheese in foods for DD and use flour tortilla chips to di fake Tex-Mex. Turkey barbQ is also a hit with our crowd.

I would use the dark meat to make a turkey chili. Helps cover the flavor and will freeze well in small portions for later.
