So other than checking the WDW website and websites like MouseSavers, is there any place else I should be watching for discounts?

I usually use Disney's website when I book. Disney's general public discounts that cover May 2017 just came out the last few days of December, which I 'think' follows a similar pattern as last year (not totally sure on that). Will probably be roughly the same for May 2018 but you have to pay attention because past performance is no guaranty when it comes to Disney. ;-)

I like MouseSavers a lot as a resource, I used it a bunch when I first started going and trying to get my arms around booking a Disney trip.

Some people use sites like Orbitz, but I can't personally vouch for the timing or quality of discounts - probably lots of info out there on the boards I would guess.

Using an experienced Disney travel agency is also an option as many have special deals during certain times of year and for certain resorts.

Definitely not my area of expertise but hope that helps some.
