Love pineapple, especially fresh.
I use it in Tiki drinks quite a bit.
I make Thai pineapple fried rice pretty often.
Its also great on Pizza.
I get fresh when its reasonably priced, I get frozen more often, and I always have a couple of cans around just in case.
I also buy a case of the small dole cans of juice to have for my pub, but trader joes also has a really good bottled version, it just goes off before I can use it all so the cans are easier.
You can also add some acids to make an acid adjusted pineapple juice and replace lime juice in margaritas
A real treat is to get a fresh pineapple and quarter it and cook it on a very hot grill so it gets grill marks and caramelizes.
