So the producers in Quebec are dipping into their strategic stockpile because of of an extremely short harvest season and increased demand.

It does seem a little weird though since I found that it's no longer mostly made with the old method of hanging buckets and manually collecting them, but by tapping them with plastic tubing (usually blue to improve visibility) and then using a vacuum to suck them into central collection locations.
