I would enjoy all of those ingredients, but not all together. I rarely have had a shish kabob.
Because nobody ever has a lot of zucchini to use up...All of the above. Plus it's a great way to use up zucchini if you have a lot of them.
I have best results with meat on one skewer and veggies on another. It looks pretty when they're all combined on one skewer but you're right--the veggies will usually be done before the meat.I am not a fan, in order for the chicken to be cooked, the veggies are overcooked. I have done skewers with all meat on one, all squash one one, etc so they can be cooked properly then removed all the items and put them on a platter. But never combined on one skewer.
