Signature dining?

What's the best "signature" or 2TS credits resturants at Disney? If you could only choose one, where?
 
The two already mentioned were the first to come to mind. If I had to pick between the two, the easier to get to for that trip would be the deciding factor. Otherwise, flip a coin. They're both great.
 

Of the 3 I've been to (not counting the character dining meals that are 2 TS), I would put Jiko at the top, I actually remember that meal. I don't understand the love for Narcoossee's, it was decent but I don't remember being wowed by it. I know it gets a lot of hate, but I did like the pre fixe at the california grille, but I'm not sure it makes sense with DDP.
 
We mostly eat at signature restaurants when we go to Disney. Flying Fish and Narcossee are my two favorites. I am assuming you are on the dining plan if asking about credits but if not I also recommend Bluezoo at the swalphin.

Narcoossee's. Excellent menu and service. Delicious seafood and the Almond Crusted Cheesecake is my favorite DW dessert.

We make a point of going on every trip. Viewing the MK fireworks and Electric Water Pageant are added pluses.
 
My personal favorites that fall into the 'Signature dining' category are Jiko, Tiffin's, Topolino's, and Monsieur Paul.

Some that are rated 'signature' are restaurants I like, but I don't think of them as signature - Le Cellier, Paddlefish, Morimoto, and Boathouse - I think the food is pretty good at all of those, but in my mind they aren't what I'd consider signature.

The best one is the one with the menu & atmosphere that most appeal to you. We would never eat at Jiko, there’s nothing we would eat on that menu. But it’s always mentioned as the best. But not for us. We absolutely love the steaks at Le Cellier, but the atmosphere is lacking. We love the atmosphere at California Grill, but the current menu is a little too limited. We find Yachtsman’s Steakhouse pretty consistent. Monsieur Paul is hands down amazing. Not sure if it’s on the dining plan. Find the menu that you like best, decide if you want in park or resort dining & decide from there.
 
Adventurous palate surprises- Jiko
Classic fine dining- Monsieur Paul's
Everything else other than V&A in the World is step below these two. Some great food is available elsewhere for sure but these two actually are actually memorable.
 
My favorite is Jiko. It's a little biased, because my only time there I got to sit at the counter where they prepare the flatbreads. But when you count the food, drinks, and atmosphere, it's number 1. Hollywood Brown Derby is 2nd, Flying Fish in 3rd.
 
The only one we've been to recently is Topolino's for dinner, and it was excellent. Of all the TS meals, it was one of few that we felt was worth the price, but we did not use dining credits. On the other hand, we all chose our food somewhat by process of elimination.*

Agree with PP, Jiko (and Artisit Point) have never appealed to us. Have not been to Narcoosee's in a few years, but we were not wowed last time we were there. It seemed rather overpriced to us.

*By that I mean some of the menu didn't appeal to us. At some non-WDW restaurants everything looks appealing.

One of the better parts of the menu was the appetizers. The tomato-cheese salads were both delicious, and the ratatouille fritters were excellent, and we're not normally all that big on fried food. The peche repose was also refreshing.
