Signature dining recommendation?

We really enjoyed Flying Fish and Tiffins.

As crazy as it sounds, the steak at FF is the best I've ever had (even on property). I also enjoy the steak at Jiko, but didn't feel the same level of service that FF did (the manager came out to my table and asked me to cut my steak to ensure it was cooked to my taste). That is service.

CG and Yachtsman Steakhouse would be my recommendations. Yachtsman doesn't have sushi but their steaks are phenomenal.
