Signature Dining Question

My husband and I booked a late reservation for Artist Point on NYE, as we will be celebrating our anniversary and NYE (conveniently, both occur on the same day :-). When I made the reservation, I inquired about Prix Fixe vs. a la carte; Artist Point will remain an a la carte restaurant on NYE. While DH & I have vacationed at Disney numerous times, we have yet to dine at a Signature restaurant. We are both fairly frugal (and young), and we hope to "economize" while dining at Artist Point. Would it be uncouth of us to order just appetizers and dessert at a Signature restaurant? As we'll be dining after 9 p.m. (and will probably have champagne later) I'm not sure either of us will be in the mood for a heavy 3 or 4-course meal.
 
First - hope you love Artist Point - its one of my favourites :)

I often just have a starter and pudding; I'm British - 3 American sized courses are too much for me! But i have never had a problem doing so. I've done this at Artist Point and not had a word mentioned.
