Side Dishes for Thanksgiving?

Do you have a super easy recipe for something that everyone loves?

I might be cooking Thanksgiving this year and was just trying to get something different.
 
Pan roasted brussel sprouts. Basically clean, cut in half, par boil, drain then throw in the largest pan you have on med heat with butter, salt and papper. Let them get slightly crispy/caramelized. It really is very easy.

Another one is creamed spinach - it's very easy to make. Thaw and drain some spinach VERY well. In large pan sautee diced onions until translucent, add the spinach, salt and pepper to taste. Sprinkle with some bread crumbs and flour, work it all in, then add milk till it's the consistency you like. Before serving check all seasonings then sprinkly lightly with nutmeg, mix and serve.

Candied carrots are also very easy - basically boil, drain then toss with equal parts brown sugar and butter, thicken with a little cornstarch if it's too runny, season and serve.
 
Green bean cassarole. My family just loves it. I double up on the onions though.
 
Ditto on the pan roasted brussel sprouts! Although I don't parboil mine. I buy fresh ones, and clean them then just put them on a pan coat with olive oil sprinkle with salt and pepper and raost for 45 minutes. I have served these to brussel sprout haters before and they loved them. They come out so nice and brown a crisp. My mom says they're better than french fries.

Ditto on this! Easy and delicious.

We also like candied yams.

Now I'm really hungry....
 
Subscribing to this thread. I always try and do something new and interesting, since, for the most part, my family doesn't have picky eaters. My grandmother always takes care of the standards, the turkey, stuffing, and mashed potatoes. So, I'm going to try and come up with an interesting vegetable side, maybe two, as well as some desserts.
 
Cranberry Salad: make a day ahead of time if possible.

1 bag cranberries - finely chopped in food processor
add 1 C. sugar, let sit a couple of hours or overnight if possible.

2 cans crushed pineapple - drained
2 16 oz tubs Cool Whip
1 Bag mini marshmallows

combine the pineapple, Cool Whip and Marshmallows with the sweetened cranberries - refrigerate for several hours to allow the marshmallows to absorb the flavors and excess liquid.




Carrot Raisin Salad:

2-3 Lbs. of carrots finely shredded (do not buy the already shredded they are too thick and do not have a good texture for this salad)
1 box golden raisins
2 cans pineapple chunks

Mix and let sit overnight - stirring often to allow the carrots to absorb the pineapple juice.
 
I do a sweet potato casserole that is delicious! I don't have the recipe here at work, but can post it later if someone is interested!

I LOVE brussel sprouts. But I know from experience that I am one of a small minority. I'd think twice about serving sprouts for a Thanksgiving crowd unless you are very familiar with their tastes.
 
Warning. Totally not healthy.

Cheesey Potato Casserole

2 lb. pkg. frozen hash browns, completely thawed
1 can cream of chicken soup
1 tsp. salt
1/4 tsp. pepper
1/2 c. onion, chopped
1 pt. sour cream
2 c. shredded cheddar cheese

In a large casserole, combine all ingredients except potatoes. Fold potatoes into well blended mixture. Top with crushed Ritz crackers (as much or as little as you like). Bake at 350 degrees for 40 to 45 minutes.
