Side Dishes for Picky People

I am hosting family Sunday at my home. My sister is making the main dish, roast beef. I am doing the sides.

So far, I have: mashed potatoes, Green Beans (sauted with bacon and garlic), citrus salad, and rolls.

I think I am missing one more side dish, so I need ideas.

The thing is, we are a picky family. Two people won't eat dresssing, so the citrus salad will be served dry with the dressing on the side.

No mushrooms, no onions, no sauces, nothing like that.


Would stuffing work even though we don't have a bird?

Stuffing would be ok if they liked it. I would go with the corn and Mac and cheese. I am super picky and would eat both. Also are you having gravy? I hate it when DH's family has mashed potatoes without gravy, I actually like gravy lol.

By picky, I mean they wouldn't eat over-healthy, no mushrooms, no onions, nothing they haven't had before, blah, blah.
 

Our new favorite is roasted asparagus. Even my picky, vegetable hating son likes it. Just trim the ends, put it on a cookie sheet, brush with olive oil and sprinkle with kosher salt and fresh ground pepper. Put in the oven on 425 for about 10 minutes. Super easy and delicious!

I have actually converted 2 of my picky family members (FIL and aunt) to eating aspargus because they tried them. I'm not sure what made them put them in their mouths to begin with, but they did, and now they love "MY asparagus". (I really think they only had canned as a kid or something!)
 
Corn (plain) and mac & cheese (keep it plain) are good suggestions. I am used to a picky DD11. Of what we have at most holiday meals she will eat ham, turkey (but just a little), mashed potatoes, coleslaw, corn, and rolls. She would eat plain green beans but not with bacon & garlic. Honestly, none of the four of us care for onions, mushrooms, and such, and prefer simple foods over heavily seasoned/sauced, but the rest of us eat more of a variety than she does.

One of my standbys is applesauce jello. (Just prepare a box or two of jello- red ones are good- short the cold water just a bit and mix in some applesauce, let set.)

If you think they would like coleslaw, I keep mine simple too. My sauce is only salad dressing (the kind that is like mayo but called salad dressing), sugar, and a bit of white vinegar. Very plain and no weird flavors.
 
Not my mac and cheese!!!! Cheap boring cheese? I am not talking about the stuff that comes out of the box!

I am quite healthy and I eat even carbs in moderation!

OP, I would think mashed potatoes would satisfy the picky eaters but if you feel you need to add something, my vote goes to mac & cheese too.

And to the pp who mentioned asparagus, my picky eater absolutely loves them. My dd, who is the least pickiest eater in the house besides dh, can't stand them. Its funny how things work.
 
Most people are just suggesting carbs. How about, Cauliflower (instead of potato) mashed. Tastes like Potatoes, but is a veggie.

I would do either corn or roasted carrots.
 
My youngest is very, very picky. Pain in the neck picky. On your menu she would eat the meat and the potatoes. I would add corn and applesauce, or melon. I'd also add carrots with or without butter in them.
 
You all have some easy to please picky eaters :rotfl:

My DD would not eat any of the vegetables .........except the corn.
No stuffing, no jello or applesauce.

Her plate would have potatoes (no gravy), corn and/or mac and cheese (if it is plain and has no added veggies or anything in it and a roll.
 
This thread make me glad I don't really have picky eaters. The only thing that is off limits in my house is Olives and that is because I can't stand the smell or taste of them.

I vote mac-n-cheese, or a rice dish. I made a wild rice dish with sausage and mushrooms from thanksgiving this year that was delicious.
