Side Dishes for Picky People

I am hosting family Sunday at my home. My sister is making the main dish, roast beef. I am doing the sides.

So far, I have: mashed potatoes, Green Beans (sauted with bacon and garlic), citrus salad, and rolls.

I think I am missing one more side dish, so I need ideas.

The thing is, we are a picky family. Two people won't eat dresssing, so the citrus salad will be served dry with the dressing on the side.

No mushrooms, no onions, no sauces, nothing like that.


Would stuffing work even though we don't have a bird?
 
I have a few picky ones, too. They insist on corn especially if we are having mashed potatoes.

So...I battled the Trader Joe's parking lot for 2 bags of frozen corn!

Sounds like my husband. He HAS to have corn with his mashed potatos. Corn is a very eay side dish and most picky people like it:thumbsup2
 
DD is the pickiest person on the planet.

She would eat the mac and cheese..............and the corn. But would skip the beef, the salad, the green beans..........told you ;) (and yes, we are talking an adult).

Swiss Corn Casserole

It doesn't take hours to make

in fact it's a very simple recipe, and it goes in the microwave..so you don't even need to save space in the oven for it. But it's always the first thing to disappear off the table, and always the most requested. Enjoy!
Swiss Scalloped Corn

3 slices bacon, cooked, cooled, and crumbled
2 (16 oz) cans whole kernel corn (drained)
1C shredded swiss cheese
1/2 tsp onion powder
1/8 tsp pepper
1 1/2 tab. flour
1 egg
1 (5 1/2 oz) can evaporated milk
1/4 c dry bread crumbs (can use either plain or flavored)
1 tab. melted butter
dash paprika

In bowl..beat egg and evap. milk together
In separate bowl..mix together corn, cheese, onion powder, pepper and flour
Add the egg/milk mixture to it and mix well.
Place in (microwavable) casserole. Top with bread crumbs. Sprinkle with bacon and paprika, Top with melted butter
Cook 10 minutes on MED high...Let stand 5 Minutes

you can halve the recipe if there are only a few people..but around here they like the leftovers even better!
 
I'm super picky...but I could eat my weight in mac n cheese! I vote that!
 
I'd say your list is fine. But I do like the corn idea, too.

I'm doing a raw vegetable platter for my picky ones.
 
If you do Mac and Cheese that opens up a WHOLE new debate. Baked? Creamy? Bread Crumbs on top? What type of Cheese? Sharp Cheddar, Mild Cheddar, various type mixed together? Even Boxed? I find people are very very almost crazy about the type of Mac and Cheese. :joker:

I would go with the basic stuffing, even stove top works. If you do stuffing it is easy and quick especially if you buy the bag of already seasoned cubes and just heat up some chicken (or beef stock) mix and bake.

I didn't even think of corn! I would love the corn casserole, but I'm afraid they might find it fussy.
 
mac and cheese even picky 4 year olds eat that and it's Christmas who doesn't want an extra starch!

What kind of picky? Like, healthy-food picky? Because a lot of people would probably describe me that way, and there is no way I would eat mac & cheese. It's just carbs and cheap, boring cheese. No thanks.

How about some really plain roasted vegetables? A green salad? Sauteed mushrooms? Breadsticks?

Not my mac and cheese!!!! Cheap boring cheese? I am not talking about the stuff that comes out of the box!

I am quite healthy and I eat even carbs in moderation!
