Side dish/Salad for BBQ cookout

Not exactly a salad...but we often do deviled eggs. Instead of trying to transport them fully prepared, we put the yolk filling mixture (hard boiled yolks, Miracle Whip, and a dab of mustard, well mixed) into a plastic zipper bag. The egg white halves are laid out on a platter and covered with plastic wrap. When we get to the picnic, we snip a small corner off one of the ends of the bag and carefully squeeze out the yolk mixture into the little egg white halves--like using a pastry bag. Add a sprinkle of dill or paprika (or alternate) to the finished eggs to garnish. These get snapped up every time. :thumbsup2
 
Ever do Apple Snickers Salad?

Freeze some snickers bars (or you can do milky ways, if you have allergies to peanuts)
Dice apples
Break up the candy bars once they're frozen
Mix up in a big bowl with cool whip

Would this be considered a dessert?? This sounds yummy! Wouldn't it be
easier to cut up the candy bars before freezing? What types of apples
are used - granny smith for tartness, red delicious for sweetness?
 
You could do a Green Bean, or Three Bean Salad, or Black Bean and Corn salad. Those are always big hits!

We usually do a black bean relish/dip from a recipe on the side of Kroger black beans--black beans, corn, tomatoes, onion, cilantro, cumin and lime juice. Goes great with Fritos.

The great thing about this is that it doesn't need refrigerating and it tastes better the longer it sits and all the flavors mix.
 

Bacon wrapped mushrooms

Wrap a 1/2 slice of bacon around a fresh mushroom. skewer and put onto the pit until cooked. Brush with bbq sauce. My kids love this!

1 Pound of Cherry or grape tomatoes (4 cups)

1 Large cucumber, peeled, halved lengthwise & chopped

(2cups)

2 Large celery stalks, halved lenthwise & chopped

(About 1 1/4 cups)

1 Large Green Bell Pepper, cored & chopped

(About 1 1/4 cups)

1 Small Red Onion, chopped (About 1/2 cup)

1 Garlic Clove, minced

1 Tbsp. Olive Oil

1 Tbsp. Worcestershire Sauce

1 Tbsp. Red Wine Vinegar

1 Tsp. Lemon Juice

1 Tsp. Salt

1/2 Tsp. Ground Black Pepper

Several dashes of red pepper sauce, like Tabasco

Directions: Mix all ingredients in a large serving bowl, toss well, and serve!

Servings = 6

Tip: If you make this salad in advance, wait to add the Worcestershire sauce, vinegar, lemon juice, and salt until you are ready to serve so that the vegetables do not get mushy. You can make this as spicy as you want by adding the Tabasco!! ALSO – THIS WOULD BE A GREAT GARNISH OVER GRILLED OR BAKED FISH!

Another one I do is what my step-mom calls pistachio salad, because she uses lime jello, but I like cherry.....you can use any flavor...

My mom makes this all the time and my kids have named it "Green Stuff"...LOL!

Here's one of our summer favs:

Ambrosia:

20 oz. can crushed pineapple - drained
15 oz. can mandarin orange segments - drained
1 jar maraschino cherries without stems - drained
8 oz. tub cool whip
8 oz. container sour cream
1/2 bag mini marshmallows
1/2 bag shredded coconut

Another thing I found that goes quick in our part of the country (and by the guys for some reason); sliced cucumbers!
Quick, easy, can take the heat, refreshing.

7 cups of sliced cucumber (I slice it thick)
1 cup of sliced onion
1 1/2 cups sugar (Splenda can be used but label it so)
1 cup cider vinegar
1 TB salt
1/2 to 1 tsp black pepper
1 1/4 tsp celery seed
1/2 tsp of cayenne or tabasco (the longer it sits, the more heat they get)
 
Broccoli salad

Broccoli -head and stalks(peeled and diced) into bit size pieces
rasins
sunflower seeds
red or purple onion (not sure what they are called) diced fine about 1/4 cup
bacon bits

dressing made of
Mayo
sugar
vinegar

Sorry I don't have the exact amounts I just eyeball it.


a dessert side

can crushed pineapple with the juice
large coolwhip
box of instand pistachio pudding
mini marshmallows
Sprinke of chopped walnuts

Mix it all up except marshmallows. Once mixed add marshmallows.
I usually make it the day ahead (works great) and add extra pineapple juice becasue the marshmallows absorb it.

I was just going to come on here and suggest broccoli salad. I NEVER have leftovers when I bring this to a picnic. (I don't use the sunflower seeds or raisins though---tastes my vary lol)
Here's what I use.....

Couple heads of raw broccoli
bag of shredded cheddar cheese
chopped red onion
chopped bacon (I use the already cooked bacon and then chop it up)

Dressing....
mayo
sugar
vinegar


I also made a taco salad for my son's graduation party and it got RAVE (I mean RAVE reviews LOL)

Boil up a box of spiral pasta
cook up 2 lbs of hamburger (add taco seasoning after draining meat)
cut up a head of lettuce
couple bags of shredded cheese
bottle of french dressing (some use catalina, but we prefer french)
crunch up 1/2 bag of doritos

Mix it all together and then top off salad with rest of crunched up doritos
***I usually wait until the last minute before serving to add the crunched up doritos. MMMMMMM You can serve with sour cream or taco sauce if wanted.
 
Broccoli Ramon Noodle Salad

Ingredients

* 1 1/4 cup canola oil
* 3/4 cup cider vinegar
* 3/4 cup sugar (or splenda)
* 2 package broccoli florets
* 2 bunches green onions, thinly sliced
* 1 package cole slaw
* 1 1/4 cup slivered almonds
* 1 cup sunflower seeds
* 3 package chicken flavor ramen noodles (crushed)
*3 packet chicken flavor ramon noodle seasoning

Combine vegetable oil, vinegar, sugar, and flavor packets from ramen. mix well until sugar dissolves. Next, Crush the ramen noodles in the bag. Combine broccoli, green onions, almonds, CRUSHED ramen noodles, and sunflower seeds in bowl. Mix with dressing. Can be mixed right before serving or a couple hours before, depending if you want the noodle crunchy, soft, or semi soft, etc.
