Hello fellow DISers! :wave2: I have a potluck dinner on Friday night. The host is providing the main dishes which will be pulled pork and turkey.

So, do you all have some easy side dish or dessert recipe suggestions? I need something fairly simple because my apartment's kitchen is pretty small and I don't have any small appliances (blender, chopper, mixer, etc).

Thanks in advance for all your help! :teeth:

I make this a lot to take to pot luck suppers. Also, there is no chopping involved! Two cans white corn (15 oz.), 1 stick margarine or butter, 1 8oz. block of cream cheese. 2 cans chopped green chiles (I prefer the mild kind, but you may like yours "hot"). Melt butter and cream cheese in microwave or on top of stove. Add in two cans of drained corn and chiles, undrained. Mix well and heat until hot. Can be heated in microwave, on top of stove, or in oven. I serve this a lot with pork. HTH!

PS - I have also cooked this without *all* the butter or cream cheese. It turns out very well using less.

Thanks for the suggestion! Any others? :Pinkbounc

How about sweet potatoes? Bake them in the oven and serve with butter and brown sugar & cinnamon.

Cheesy Potatoes:

1 1lb bag of hash browns, frozen (I use the chunky ones not the stringy ones)
1 16 oz sour cream
1 can cream of chicken soup
1 4 lb bag of shredded cheddar cheese
1 stick of butter, melted
corn flakes

mix all of the above, except corn flakes and put into a well greased baking dish, 9x13 pan works well. Sprinkle corn flakes on top to cover the dish and bake at 350 for about 1 hour.

Baked beans, corn bread, corn with red & green peppers added to give it that Southwest/Mexican/barbeque look.

A barbeque place near my house makes red potatoe salad. They take red potatoes, slice them up into big-ish chunks, add sour cream, chives, bacon, heat it up, serve it with cheddar cheese to sprinkle over it. Salt & pepper to taste. Very good. They call it "Red Potato Pie".

Wow, that sounds awesome! I'm getting hungry. :goodvibes

Thanks everyone! Suggestions are still welcome, of course. I'll be headed to the store for supplies later today.

do you have a crock pot? If so I'll post an amazing chocolate dessert that I made last week. Have to run now or I would post it

No, no crock pot. :( But post the recipe anyway please? I love new dessert recipes and I could pass it on to people with crock pots (so they could make it for me)!! :teeth: :rotfl:
