If we have late seating dinner, it is to my understanding that the shows are before dinner. If I want to maximize my time outside, will I have time to go to the show, THEN shower, and THEN go to dinner?

Yes. As long time cruisers, this is one of the two things we didn't like about Disney.
The other being the lack of a disembarkation system.

Having said that, Disney does both these things because they are clearly popular with folks who cruise Disney.
 
The first show is at 6:15 PM. The shows run an average of a hour. So, yes, you could have time to shower after the show and make it to dinner.
 
I would say that if you are taking a quick shower then you should be able to go to the show and then get ready for dinner. Or maybe you could think about going to the afternoon.
 

We were very lucky to see all the shows at matinees on our last cruise. It certainly freed up our night to do other things. However, I understand that it is no guarantee that a matinee will be shown of any given show.
