Shopping hours after park close

So I know that the shops will generally stay open for at least (?) an hour after park closure, but is there a consistent policy or practice on this? Do they all stay open an hour after park close, only certain ones, does it vary from park to park? I'm particularly interested in HS. We aren't spending much time there (for obvious reasons) but will be there for the SW fireworks and Jingle Bell, Jingle Bam since we haven't seen either of those. I'm hopping to score some day of FP+ for each night we are there since we will be there on 2 different nights for each show, but I also want to check out the SW merchandise. So, I'm curious how late the stores will stay open when the park closes at 8pm and the show is at 8pm. TIA!

1. Not all shops (actually, just a few.)
2. The major shops near the park entrances/exits will be the ones to be open latest.
3. The shops of Hollywood Blvd. (and a few on Sunset Blvd.) will be open at least 30-45 min.
after "closing time." (Some, 60+ minutes after "closing time.")
