If I have more than $750 in shipboard credit when I board, do I still need to put down a credit card? Will they charge the card right away or will they wait until the $750 is used up?

Your shipboard credit will be used first, before anything is billed to your credit card.

They will probably still want you to put down a credit card...just in case.
 
If you want to have a credit, do you just give them the cash to apply to your account when you check in?
 
Yes, you can prepay for shipboard account upon boarding, but, keep in mind that if you put a credit card on file, they will automatically charge that card once your balance hits $400....so, be sure you make a cash payment at guest services before you hit the cap if you don't want the card charged....you can always get a balance check by going to GS at any time.....Andy
