We will be going to MK this weekend. I have heard that one of the best ways is to get into the queue for seven dwarf mine train at around 10:50-10:59 pm if the park closes at 11pm. Would it still be 30 minutes wait at that time? Thank you.

Disney inflates their posted wait times as official park closing hours near. If the display says that it's a 30-minute wait, you'll be on in less time than that. If it says it's a 60-minute wait, you're likely to be in line for 30-45 minutes.

We rode just a few weeks ago. The posted wait at about 10:40 pm was 50 minutes but the actual wait was only 15. We could have hopped in line again just before the 11 pm close but opted for some Main Street shopping instead.
We’ve been using this strategy since 7D was new, and our longest wait ever was 20 minutes during opening week in 2014.

Agree with getting in line just before the park closes. The ride is also just a lot of fun at night. Not quite as good as SDD at night, but still really fun.
Expect the actual wait to be under whatever is posted.
