Hi there. I couldn’t find the answer to this anywhere... we are a family of 4 - can we do 2 separate excursions at one of the ports? If my cautious child didn’t want to do what his adventurous dad and brother wanted to do - I could take him and do a different excursion?

Yes. When you book an excursion, it will prompt you to select who's taking that excursion.
 
We did a mix and match Alaska cruise with excursions for 11 people...three families. Wife and I took 7-year-old granddaughter with us on one excursion while the rest of her family went ziplining (she was too small). Later, on a Mexico cruise, we took son and son-in-law with us to a brewery while the rest of their families went on other adventures. Just be sure you have proper documentation for children, if needed, when you depart the ship.
 

On our Western Carribean, my DS13 and I did a helmet dive while my DS11 and DW took a glass bottom boat tour. You don't have to select activities by the full stateroom, just by individual. (However, I don't know if it will let a youth sign up for something without an adult also going.)
