Seeking tips and advice for Jampacked Epcot Morning in Sept...

I'm going to Epcot w/ a friend Sept 23. We plan to spend the morning and early afternoon there, then monorail to Magic Kingdom sometime between 3pm and 7pm for Not-So-Scary. (Likely around 3:30, to maximize time at MK)

We have an ADR at Garden Grill in Future World for 8:10 (basically the only restaurant left at the time we booked)... we're not married to the idea of actually using our ADR, and would be open to skipping out on it and eating the fee if it seemed like a good idea. That said, we're not necessarily opposed to keeping our ADR either, if all our other ducks seem fall in a row and we feel like breakfast.

My friend is a first timer, I'm not. My personal can't-miss priorities are Soarin' and Frozen, as they're new and shiny to me. I'd also like to get on 3 Caballeros, since I haven't seen the new animatronics yet, but I wouldn't be too broken up if we had to cut it.

Beyond that, I'm very flexible to whatever she wants to do, but would also like to show her most of the highlights and fun rides. I'm planning to suggest things like Spaceship Earth and Test Track. I also think she'd enjoy Living w/ The Land. But mostly planning to let her call the shots. I'd like to hit as many highlight rides as we can early, then hopefully tour a few of the nicer spots in World Showcase between noonish and whenever we leave for Magic Kingdom.

I last went to Epcot in Febuary and was able to hit mostly all the rides before Noon, then leisurely drink around the world until park close. BUT Frozen and Soarin weren't open in Feburary, so they weren't a factor. And I anticipate they could throw a major monkey wrench in things. But my February trip was a party of 7, and this is a party of 2, and 2 people are a lot easier to keep moving than 7.

We're staying offsite, so we won't be able to book Fastpasses until 30 days out. I already fear/assume Frozen will be booked solid by then. I'll try my best to get a fastpass for it, but will likely fall back to Soarin as an alternative.

I'm basically just looking for people's general thoughts on our best plan to hit all the rides mentioned... and still have a couple hours for world showcase in a perfect world.

TLDR:

Should we skip our ADR and go straight to a ride? If so which?
Should we keep our ADR, then just go straight downstairs to Soarin?
Will Frozen fastpasses be booked solid at 30 days?
Is the Frozen standby line at least tolerable these days? (My Disney app sometimes at times claims it's under an hour, which surprised me. Though it's over an hour just as often.)

Just looking for people's thoughts on the best strategy for maximizing fun times in Epcot with only half a day to work with, and a requirement we ride Soarin and Frozen at the very least.

PS. I plugged all this into touring plans w/ the meal at the Garden Grill, and no fastpasses, adding all our rides, and a few stops in World Showcase, and it was predicting we could get it all done by 2 o'clock to 2:45ish (depending on a few tweaks). A full hour-ish before we plan to leave. Which makes me hopeful. That said... the best laid plans of touring plans can often go awry, haha...

I'd suggest keeping the ADR, but don't wait on the characters if they aren't important to your friend. Pay your bill early, eat, and leave for Soarin.
 
Hate to throw a wrench in your plans but F&W will be in Epcot while you are there. If you are only planning on one day at Epcot, you might find 2 or so hours not enough time to enjoy it. I would definitely plan on heading over to WS around 11 when it opens to get as much in as you can.

I'm aware of that wrench, and believe me, not completely certain how to account for it, hahaha... But your advice is noted.

Never been to food and wine. Have a rough idea what to expect, but don't really know how to wrap my head around it with no hands on experience. That said I know what countries I like, and know what countries I could skip on an average trip to Epcot, which I hope can speed our journey around the showcase at least a little. Though I'm sure you're correct in that whatever time we have may not be enough. Always want to do everything at Disney, but rarely is there ever enough time! haha...

But like I said. I personally, don't want to miss Soarin' and Frozen. I'd like to ride 3 Caballeros. Those are my few must-do things. Beyond that I'm happy to suggest things to her, but will mostly just follow her whims, and wouldn't be too broken up if I missed other rides. So it's flexible. I could easily skip things like Nemo, Turtle Talk, Mission Space, etc and head to the showcase earlier if she preferred. But I'd at least like to devote SOME time to rides up front. *Shrug*

Truth told, Food & Wine is one of the reasons I'm not altogether objectionable to skipping the ADR. In a buffet style meal, I tend to lose all sense of portion control, and try one of everything. Going to Garden Grill for breakfast scares me, as I'll probably fill up more than I should, leaving less room for food & wine, as well as Halloween Party snacks (and I want to leave room for those). Probably wouldn't have chosen a buffet meal if anything else had been available.

One silver lining is, for as much cram-work as we need to do on the first half of the day at Epcot, everything I've read about Not-So-Scary has given me the impression that crowds are low, and wait times are minimal, so we should be able to get loads of fun in on the second half of the day. Even if we don't do every last thing we want to at Epcot.

The eternal conundrums of limited park time! Just trying to come up with the best plan for doing as much as possible... without going insane, haha.

PS. I actually managed to find a dinner table for 2 available at Be Our Guest last night. Which shocked me, as I've never been able to find dinner slots there (but my party is usually much bigger). It took every fiber of my being not to book it. I'd really like to do dinner there someday, but in this limited half-day scenario, I just don't want to devote an hour to a sitdown meal in the thick of the party. Would much rather do rides, and snack on seasonal goodies on the go.
