Seating on Rides--Traveling with Infant

We were at Disneyland just a year ago but I can't remember how many guests can be seated on various rides. Nor which rides a baby absolutely can't go on (obviously not ones with a height limit).

We have a family of 5...I'm fine with splitting the family up as long as 3 of us can go at once while the other 2 go somewhere else. What rides can we do this/not do this on?

We are going with 2 adults a >40 incher a <40 incher and a baby and trying to plan what we can and can't do. Thanks in advance!

Our family did the same thing back in November, you can read our trip report for more details but I rode with the baby and our toddler most of the time and my husband rode with our preschooler on the rides that dont have height restrictions. Have a great trip!!
