So I've been looking around for the answer to this question and haven't found an answer. Can someone tell me if the bowls at Satu'li Canteen that I've been hearing so much about are inteneded to be served hot or cold? And just to verify there is seating in AC right?

Mine have been hot - and so good ! And yes, inside seating

Hot and delicious! There is indoor seating with AC, but this is a very popular restaurant so depending on the time of year indoor seating can get very crowded and hard to snag a table.

Mine was cold, but it was supposed to be. I had the lettuce and greens base topped with beef, which was basically a steak salad.

It’s can be hot or cold depending what base you pick. Basically you pick a protein, base and then sauce. They assemble it and give to you. They don’t stir fry or do anything after assembly.

The restaurant has indoor and outdoor seating but the indoor seating can fill up at peak times.

When I've picked the noodles and beef, it's been hot. It may be cold if you pick the salad greens. I don't know if they add the protein hot or if they have them cold for the salad selection; my assumption has always been that they add the protein hot to the salad greens for a warm-ish salad.

Protein is hot for the salad. I assume in the kitchen they just have large vats/tubs/etc of each of the meats being kept warm- would be silly to keep the same item warm and cold.
