Salad recipe for Easter

Im assigned salads for Easter dinner Sunday. Anyone have any good recipes? I don’t want to do the usual tossed salad so any ideas are appreciated!
 
I get assigned salad every holiday for my in- laws so I've tried tons.. Assuming ham?
Spinach Tortellini salad
Greek Pasta Salad
Tomato, Bacon and cucumber salad
Layered Cornbread salad
 

If it were me, and you're serving ham, I'd do these...especially b/c beets should be perfect right now, but probably will never be one those "hot veg sides" someone else is bringing:)...and not too many ingredients, so not gonna involve 800 different things...

PS - for both recipes, be "light" with the sugar or dressing, and add more if needed (so don't dump all at once)...

I bring taco salad to every family dinner. Lol.

1lb ground beef, cooked with taco seasoning on it. Drain. Cool completely.

Then make up a giant salad with your favorite veggies. We do lettuce, black olives, green peppers, onions.
Dump a bottle of Catalina dressing and the cooled beef into it and referigerate for 30 mins or so. When you get to lunch, add a bag of crushed up Doritos and mix it all up and enjoy!
 
I’m doing a simple pasta salad with bow tie pasta, cheese, bacon bits, and dry ranch dressing mixed with mayo. I usually add some crunchy veggies but some picky eaters this meal so that’s a no go. I’m also doing a basic potato salad with potatoes, sweet pickle relish, eggs, onion, a bit of mustard and mayo...salt and pepper. We are south so I’m sure it’s a very regional thing.
 
I have to throw this out there - we don't do a ham for Easter, but usually have a BBQ. Our "season opener" salad is Frito salad. OMG.

1 bag of regular Fritos
1 jar of Cheez Whiz
1 can of chili no beans
1 small bag of salad

Heat the Cheez Whiz and chili together on the stove
Put salad and Fritos together in a bowl and pour chili cheese mixture over. Stir to mix.

It is soooo good. It doesn't save well - the chips get soggy and the lettuce wilts - but we usually don't have to worry about that because everyone gobbles it up!
 
I think a classic salad would go best, lettuce/fruit/nut/cheese/vinaigrette. Baby greens/cranberries/walnuts/blue cheese, Romain/sliced grapes/sliced almonds/feta... Or maybe a baby spinach salad with hard boiled eggs, and warm bacon dressing, mushrooms.
 
Here's the salad I make ever Easter and my family loves it

1 bag spinach
1 cup feta cheese
1 pint strawberries
1 pint blueberries
1/2 cup walnuts

I serve it with both raspberry vinegerette and cherry balsamic dressings
 
This is my all purpose salad potluck salad... I like it as you can throw in whatever and choose your dressing...

Orzo Salad
1 box of orzo cooked as directed - do not over cook.. do add some salt to the water...no oil..
1 to 2 pints of cherry or grape tomatoes sliced or 2 medium tomatoes in small chunks and de-seeded.
1 or 2 ribs of celery hearts with the tops sliced thin
1 small cucumber.. make sure to wash good if you plan to leave the skin on.. I prefer the skin off I just peel the tough part off but not all the way to the white of the cuke's. I like to slice in quarters. If you can find seedless I would go this route..
2 to 4 green onions sliced thins tops included..
Some type of Italian dressing...My family likes a more creamy dressing so cumber ranch works for us.

So I have dolled this basic recipe up a bunch of ways - you can in salad shrimp... or I have gotten fancy... and done marinated shrimp on the grill and chopped and added into the salad..and homemade dressing with lemon, wine, herbs, olive oil, and garlic.

You can add in olives, feta, fresh mozzarella, mushrooms, pepperoni, salami, broccoli, cauliflower, carrots, summer squash, zucchini, spinach...Not all at once but different combos of them... and then I change up the dressing...

I have done roasted veggies with a honey balsamic and mixed with the orzo...
