This is my favorite salad--my dad taght it to me:
Add the following to large bowl:
-Cube 2 ripe avacadoes*
-slice two med. tomatoes in wedges*
-Slice 6-8 mushrooms (or as many as you want)*
-slice about a half a red onion*
-slice a whole cucumber* (hint: peel it so that it looks "striped"---looks very pretty)
*you may need more for larger group
Dressing:
1/4 cup red wine vinegar
3/4 cup extra virgin olive oil
1-2 cloves of garlic, crushed or chopped finely
2 1/2 tbsp Salad Supreme (by McCormack)
1/4 teaspon of freshly ground pepper (or about 3-4 twists)
1/2-1 teaspoon anchovie paste (optional---but it really adds wonderful flavor--everyone I've served this salad to LOVES it!)
Add all the dressing ingredients except olive oil to a bowl. Mix with a fork until combined. Slowly add the olive oil while vigorously mixing the dressing. Taste and adjust seasonings. Add dressing to the veggies and coat them all. Refrigerate until you need it (I like to let it "marinate" for at least 20 minutes before serving).
I love it like this or served on a bed of fresh baby spinach or baby greens! This salad serves about 4-6 people with healthy portions; if you double it, you should be fine
