I am planning a trip to disney, I am thinking of getting the dinning plan. I would want to buy the dining plan for 2 adults, I have one child that has autism and is very picky the dinning plan would be a waste of money for me because he only eats one or two things and it would be cheaper to just order for him. Is that possible or do they make you buy the plan for all?

Everyone in your room must be on the same dining plan. Only kids under three don't need the plan.

However, most restaurants will be flexable when it comes to their kids menue, our DD ordered plain macaroni off menue a few times on our last trip and it was not a problem.

You have to buy the plan for all, or for none.

However, the credits belong to the ROOM, not the person. You don't have to order a meal for each person, each time (except at "admission" restaurants like buffets, dinner shows, etc.), so you can save those credits for another time and either just share or order a small amount of extra food out-of-pocket.

You have to get the plan for everyone in your room. Disney will not allow you to exclude anyone, not even for a medical condition. However, as mentioned, anyone in the room can use the credits, they are not assigned per person. Children's credits would have to be used to order from children's menus though.
