If there is a ride I don't want to do (Everest or any coasters that go backwards lol) but my daughter does can I still go through the line with her and just not ride?

Yes. Just tell the CM at the loading dock, and they’ll tell you how to exit.
 
Yep. Often referred to as the chicken exit. I'm assuming your daughter is old enough to ride alone? Also I recommend you plan your meeting spot in case you don't have a good cell signal.
 
She's 18, Im taking her for a graduation trip so itll just be the two of us this trip. She wants to ride all the scarier rides but is afraid to stay in the line alone, especially if it takes a long time to get through it lol.

not a ride you asked about but Tower of Terror you will ride down with a CM most likely in character just be prepared. and yes they are known as the chicken exit if you are asked
 
I would suggest taking advantage of single rider lines wherever available (if you don't have LL for a ride). You can walk through the ride with your daughter, tell the loading CM she is riding alone and then just wait for her at the ride exits.
 
Every ride has a "chicken exit". So you can walk through, enjoy the queue and leave before the ride.
