Ribeye, Broccoli w/cheese?, Potato side

I am making a Finals Break dinner for my boyfriend and his roommate. They want steak, so I am going to grill up some ribeyes for them. They also asked for broccoli with cheese and I am thinking a potato side dish. Does anyone have an interesting recipes for either the broccoli with cheese or potato dish?
 
I use this one recipe from Paula Deen. Instead of the new potatoes, I sometimes subsitutite can potatoes. If I used canned, I omit this step since the potatoes in the can are already cooked: "Cook the potatoes in boiling water until tender, about 20 to 25 minutes. Drain the potatoes, let cool slightly, and then peel." It's yummy with either type of potatoe.

Crunchy New Potatoes

12 small new red potatoes
1 (0.4-ounce) package ranch dressing mix (recommended: Hidden Valley Original Ranch Buttermilk Recipe)
2 cups crushed cornflakes
8 tablespoons (1 stick) butter, melted

Preheat the oven to 400 degrees F.
Cook the potatoes in boiling water until tender, about 20 to 25 minutes. Drain the potatoes, let cool slightly, and then peel. Mix the dressing mix and the cornflakes in a bowl. Dip the potatoes in melted butter, and then roll them in the cornflake mixture. Place the potatoes in a greased baking dish and bake for 20 to 25 minutes, or until golden brown.
 
DS (27) loves these potatoes.

Sliced Baked Potatoes
4 medium potatoes
1 tsp salt
2 - 3 Tbl olive oil
2 - 3 Tbl fresh herbs or 2 - 3 tsp dried herbs
4 Tbl Cheddar cheese
1½ Tbl Parmesan cheese

Peel potatoes or scrub & rinse. Cut into thin slices, using a wooden spoon handle to prevent going all the way through. Place in dish & fan slightly. Sprinkle with salt & drizzle or spray with olive oil. Sprinkle with chopped herbs/spices. Bake at 425 for ~50 minutes. (or nuke for 10 min, rearrange after 5 min & let sit for 5 min) Remove & sprinkle with cheeses. Put in 425 oven & bake 10 - 15 min until cheese melts & potatoes are soft.

(For the herbs I used pepper, paprika, garlic, dry mustard & chili powder)

This is the only broccoli with cheese recipe I can think of:

Vegetables Au Gratin

1½ lb fresh or 4 c frozen veggies
3 Tbl oil or margarine
1/3 c chopped onion
3 Tbl flour
1 tsp salt
1/8 tsp pepper
1½ c milk
1 c grated cheese
cooked veggies
1 Tbl parsley
½ c crushed cornflakes
1 Tbl oil or margarine

Cook veggies & set aside. (Works well with: sliced carrots, cabbage, green beans, zucchini, broccoli, cauliflower, small onions, or a combo.)

Sauté margarine & onion over low heat. Stir in flour, salt & pepper.
Cook, stirring, until bubbly. Add milk & continue to cook, stirring continually until smooth. Add cheese, stirring until melted; remove from heat. Add veggies & parsley; stir just until combined. Spread mixture in 1½ qt baking pan. Toss together cornflakes & 1 Tbl oil/margarine. Sprinkle topping over casserole.

Bake at 350 for 20 minutes until sauce is heated & bubbly. Let stand 3 - 5 minutes before serving. Serves 6-8

Options:
Omit cheese
Substitute bread crumbs for cornflakes
Use leftover veggies
Add 1 c ham for a main dish
Can be prepared ahead & refrigerated until ready to bake.
 
Oh - and I just saw this one that I'd copied from the boards some time ago. I haven't tried it, but DS said he might even like broccoli if it was covered with Velveeta. :lmao: :lmao:

Broccoli Casserole

½ c diced onion
½ c green pepper
½ c celery
1 c cooked rice
1 pkg frozen broccoli pieces, large size
1 can cream of mushroom soup
1 c Velveeta
to taste salt and pepper

Sauté onion, green pepper and celery in butter. Mix every thing together and put it in a Pam'ed casserole dish, bake at 350 for 40 min. I usually double this recipe put it in a 9 X 13 dish. You can also use uncooked Minute Rice, just add ½ cup of water.

[NOTE from OP: You can cook this is you want to, I just usually run hot water over it in a colander.]
 
Twiced 'Baked' Potato Casserole

6 large potatoes (adjust for # of people)
2 Tbs. butter
1 medium onion
2 Tbs. chopped garlic (jarred) or 1 fresh clove diced
2 cups sour cream
1 cup shredded cheese
chives for garnish

Peel, boil, drain and mash potatoes. Saute onion and garlic in butter until carmelized. Add onions/garlic to potatoes. Mix well. Add in sour cream and 3/4 of the cheese. Put in baking dish. Top with remain cheese and chives for garnish. Bake at 350 for 30-40 minutes or until top in lightly browned.
