Okay, here's the short version.
On embarkation day there is a concierge reception and there you can book Palo, spa treatments, any special activities such as the Palo wine tasting and Tea with Wendy, shore excursions and even sign the kids up for the children's programming.
During the cruise the concierge staff leaves little goodies for you, such as plates of cookies and fruit.
The concierge staff will check in with you throughout the cruise to see if there is anything they can do for you. Often they will give you game cards for the kids for the arcade, and they will also take care of getting tips charged to your stateroom account if you'd like them to do that for you.

There is a special reception for concierge guests later in the week.
That's pretty much it. The biggest perk, of course, is the lovely stateroom and all the extra space.
