I am staying at Pop for 1 night and then moving to Animal Kingdom Lodge. Would it be weird to book a towncar to move us? Or should I just depend on a cab.

I would opt for the taxi, shouldn't cost more than $15-$16 plus tip, no idea what a town car might cost. It's less than 5 miles.

Another option would be to give your luggage to bell services upon checkout from POP, go to a park for the day, and then take bus from park to AKL at the end of the day and your bags will be delivered to your room when you checkin at AKL.

If you need to checkin to AKL first in order to get your park tickets and or Dining plan, then the taxi will probably be your quickest option.

You can just have bell service bring your luggage to the new resort and then go about your day and then take the bus to your new resort. We did this last year, did the online check in from saratoga to akl and then went to the resort at some point during the day to get our room keys.

I would also just have bell services transfer the luggage.
A cab might now be that bad if you just have a few pieces of luggage and you need to check into AKL as soon as possible (if you were on the dining plan and needed your credits for the day).
Two years ago we did a split stay at SSR and AKL. We had bell services transfer our luggage and walked to Downtown Disney to catch a bus to AKL. We wanted to check in as soon as possible so we could start using our dining plan. The luggage will take a few hours to arrive at your new resort.

Thanks everyone! I ended up reserving the towncar. I did the taxi fare estimator and it came up between $14-$20 depending on traffic. The towncar had a flat rate of $14. It's nice to have something else prepaid.
