Resort Hopping Breakfast on a Rope Drop Day?

We are going to be staying at the Poly in December and I would considering for a little extra Disney Magic for my 5 year old donut obsessed nephew waking up early for a surprise trip to POFQ for beignets and to just see the lobby. I looked the restaurant is quick service and opens at 6am (I would think we could get there by 6:30) if we took one of the new Minnie Vans or an uber, is it totally out of the realm of possibility that we could make it back to the Poly (again by uber or Minnie van) to meet up with the rest of our group and still make it to Epcot before rope drop? Is it even worth it for anyone who has had the beignets from there? Thoughts or advice?
 
I love their beignets. I got caught eating a couple walking my way from FQ back to Riverside.

However, is it worth blowing $40 ($20 each way) on a $6 snack? No.

A better idea is if you have a resort day planned, and are going to Disney Springs, then take the boat from DS to FQ, and get their beignets, then take the boat back to DS

If I were going to attempt it, I wouldn't go back to the Poly to meet up with the group. Just go straight from POR to EP and have a meeting place inside the park. That gives you a little more time and maybe not have to be up and out quite so early.

BTW, from what I've read the Minnie Vans don't start running until 6:30.

I would be more likely to take an uber as it is my main form of transportation living in the city. but thanks for the thoughts

I had considered just meeting at Epcot too but wasn't sure if the resort would be an easier meetup location than at the park.

We are doing DS on our first day maybe I could sneak him over while the rest of them do some shopping, that is a great idea thanks!
