I want to book 2 nights at Vero and then go to OKW my question is when I call at the 7 month mark can I book both resorts or do I have to wait the 2 days and call back and book OKW.

Assuming you do not own either resort you would need to call at the 7 month window for each stay or wait until the 7 month window for the second stay and book (hopefully) both at the same time.

As noted, you'll have to wait 2 days unless you have enough points to book those nights also at OKW and then later cancel those 2 extra days.
