When we had brunch at Palo we were encouraged to order as much as we wanted, and the server actually brought us extra... coupled with the buffet portion, it's really a lot more than 5 courses. I do agree that Remy seems more of an "experience" though.
Our server was the opposite. We weren't encouraged to order more than one of each course so we were pretty stuck with the 3.
Having said that, we were there for dinner and the portions were huge so it's not like I could have eaten more than what we had. I just wished we could have tried a few more things.
Not that this is relevant to brunch, but at Remy's we ordered both menus and essentially got one of everything and really enjoyed the variety but that could just be our preference.
